How to choose Male and Female Fish Maw?
The Male Fish Maw is elongated in shape with thicker inner body and thinner outer side. The texture is firmer and not easily to be dissolved during cooking. The male-fish maw is more "al dente" and more suitable for braising up a dish.
The Female Fish Maw is rounded and broad, with an even thickness. The texture is thicker, it is easier to become soft after cooking, and the texture is gelatinous so it's ideally used in soups or stews.
