Characteristics: Fish maw produced locally in New Zealand mainly comes from a type of fish: Ling Fish (Genypterus blacodes). Ling Fish is a species similar to cod that we commonly consume. Therefore, we often refer to New Zealand fish maw as codfish maw. The South Island of New Zealand is famous for having the world's purest and uncontaminated natural environment, along with pollution-free waters. The cold, deep-sea environment results in Ling Fish growing extremely slowly, resulting in a denser fish maw texture.
Because the New Zealand government strongly emphasizes environmental protection, the fishing of fish maw is limited. Only fish aged 5 years or older, with sufficiently large swim bladders, can be used to produce fish maw. As a result, New Zealand codfish maw has consistently been in high demand in the market, with limited supply.
