How To Rehydrate Dried Abalone

The Chinese consider abalone to be the most exquisite of the four delicacies of the sea. A symbol of wealth and prosperity, abalone is a must-have at feasts and celebrations. Each abalone comes with its own unique texture and umami flavor.

Abalone is an excellent source of protein and low in calories. It also contains a blend of minerals and vitamins including iodine, calcium, phosphorus and vitamin A. In Traditional Chinese Medicine (TCM), abalone is known for its ability to clear heat and achieve balance. It also helps to restore "yin", relieve cough, nourish the liver, and promote optical health.

Directions:

  1. Reconstitute dried abalone by soaking in water for 2 days, replace the water daily.
  2. Rinse and clean the grit. Trim away any dark bits. Blanch the abalone with ginger and shallot for 5 minutes.
  3. Simmer the whole abalone in water with other meat and aromatics in order to make stock for 6 to 8 hours. Let the pot sit for another 30 minutes.
  4. Cook on low heat for another 2-3 hours until the abalone is completely soft. Add oyster sauce or abalone sauce to serve.
