In Chinese medicine, dried scallops are considered a neutral food that has the ability to balance out “yin” energy. It nourishes the kidneys and stomach and is beneficial to regulating blood pressure and cholesterol.


Dried scallops - 6 pcs

Chinese sausage – 2 links

Egg – 2 pcs

Chinese broccoli / scallion

Rice (Leftover rice preferred) – 2 bowls

XO sauce

Directions :

  1. Rinse and soak dried scallop in water for 30 mins (retain the water for another dish). To shred the scallop, dry the scallop with paper towel and press with hands.
  2. Rinse and cut broccoli.
  3. Mix the eggs with the rice in a big bowl.
  4. Turn the wok to medium heat with 1 tbsp oil and toast the Chinese sausage and scallops. Add the rice and toss in high heat for 5 minutes. Use a spatula to break up the rice. Add Chinese broccoli and stir until well combined. Add salt to taste. Top it off with XO Sauce, yum !!!
