Braised Sea Cucumber Recipe

Ingredients : 4 servings

  • Sea Cucumber 4 pcs (medium size)
  • Fish Maw 2 pcs (medium size)
  • Shiitake Mushroom 6 pcs
  • Red Dates 10 pcs
  • Broccoli 1 pc

Other Ingredients

  • Ginger 6 slices
  • Spring Onion sectioned
  • Garlic 2 cloves
  • Oyster Sauce 2 tbsp
  • Soy Sauce 2 tbsp
  • Shaoxing Cooking Wine 2 tbsp
  • Brown Sugar 2 tbsp

Sauce Mix

  • Corn Starch 2 tbsp
  • Water 2 tbsp

Braised Sea Cucumber

Directions :

Preparation

  1. Rehydrate the sea cucumber and fish maw (please refer to our Blog : How To Rehydrate Dried Sea Cucumber & How to rehydrate fish maw ).
  2. Rinse and soak Shiitake mushrooms in water for at lease 1 hour (retain the water for later use). Rinse other ingredients.
  3. Blanch the broccoli and cut it into pieces. Set aside.

Cooking (total 45 mins to 1 hour) 

  1. Heat the wok/pan over medium heat, sauté the ginger slices, garlic and green onion until golden yellow (Do not overcook garlic). Add mushroom and continue to sauté for 1 minute.
  2. Add sea cucumber, fish maw and red dates and sauté for further 1 minute. Drizzle Shaoxing cooking wine into the pot. Add oyster sauce, soy sauce, brown sugar with a hint of pepper. Stir fry for 1 minute.
  3. Pour in mushroom water with additional water to cover the ingredients. Bring to boil. Turn to medium low heat and braise for 30 minutes with the lid on.
  4. Use chopsticks to test the ingredients. You can easily insert the chopstick into the sea cucumber, fish maw and mushroom if they become tendered. Transfer the fish maw / sea cucumber to plate if it is soft. Cover the lid and braise for another 15-30 minutes.
  5. Return fish maw/ sea cucumber into the pan, stir in the slurry and cook until the sauce is thickened. Set the plate and garnish with broccoli. Drizzle some sauce on top and ready to serve. Enjoy!

Tips :

  1. Remove the sea cucumber / fish maw from pan once it is tendered. Sea cucumber / fish maw can be easily melted if they are overcooked.
  2. Always check the liquid level during braising. Add more hot water into the pan if needed.
