Ching Po Leung- Chinese Herbal Soup
This soup is popular to drink during spring and summer, as it is believed to detoxify the body, nourish the kidneys and lungs, and hence moisturize skin.
Ingredients: Lily bulb, pearl barley, Chinese yam, lotus seed, euryale seed, and polygonatum.
Cooking instructions:
Rinse and soak Ching Bo Leung in cold water until it is soft. Blanch pork/chicken. Combine the herbs with meat and water, bring to a boil for 15 minutes and simmer the soup for further 45 mins in low heat.
Ching Bo Leung can be cooked without meat, instead, add a little rock sugar and serve it as a sweet soup.
